Boots Lemon Meringue

Ingredients:

  • Lemon Curd;
    • 3 egg yolks (reserve whites)
    • 3/4 cup sugar
    • 1/3 cup fresh lemon juice
    • 4 Tbsp butter
    • 1 Tbsp lemon zest
  • Meringue
    • 3 egg whites
    • 3/4 cup sugar

Directions:

  1. Lemon curd
    1. Mix first three ingredients in a double boiler.
    2. Once a 'sour cream texture', strain. Stir in butter and zest.
  2. Meringue
    1. Whip eggs till foamy, slowly add in sugar.
    2. Spread on top of lemon curd in a pie shell. Bake at 350 degrees for 10 minutes.
