Hamburger Soup

Ingredients:

  • 1 lb. Lean ground beef
  • 1 cup chopped onion
  • 1 cup diced celery
  • 1-28 oz. Can diced tomatoes
  • 4 cups beef broth
  • 1 cup water
  • 1 cup diced carrots
  • 2 diced peeled potatoes
  • 1/3 cup pearl barley
  • ground pepper to taste
  • 1/2 tsp paprika

Directions:

  1. In a large soup pot, brown ground beef. Add celery and onion, sauté until soft. Drain off any excess fat.
  2. Add all remaining ingredients. Cover and simmer for 1 hour, stirring occasionally, or until barley is tender.
