Pumpkin Loaf

Ingredients:

  • 3 cups flour
  • 1 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 1/2 tsp nutmeg
  • 3 cups sugar
  • 1 small can pumpkin
  • 4 eggs, beaten
  • 3/4 cup oil
  • 2/3 cup water

Directions:

  1. Sift dry ingredients, add sugar and set aside.
  2. Beat eggs, add oil, pumpkin, and water. Beat till smooth.
  3. Add dry ingredients, mix well.
  4. Grease and line 2 loaf pans. Pour batter into pans. Bake at 350 degrees for 1 hour.
