Zucchini Brownies

Ingredients:

  • 1/2 cup oil
  • 1 1/2 cups white sugar
  • 2 tsp vanilla
  • 2 cups flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 cups shredded zucchini
  • 1/2 cup pecans (optional)

Directions:

  1. Mix oil, sugar & vanilla.
  2. Combine flour, cocoa, baking soda and salt.
  3. Stir in flour mixture into oil mixture.
  4. Fold in zucchini.
  5. Bake 25-30 minutes at 350 degrees in a 9x13 baking pan.
